Cinnamon Roll Cake

I’m not big into making breakfast for my children.  I like things quick and easy to get the day going.  Occasionally though I’ll wake earlier and whip up something warm for them to start their day.  I did this last week and wow, this recipe is a keeper.

My tip, let it cool for more than 10 minutes.  While it is good then, I liked it better when it was cooled a little more – the cinnamon part got a little crispy.

Cinnamon Roll Cake

  • 3 c. flour
  • 1/4 tsp.salt
  • 1 c. sugar
  • 4 tsp. baking powder
  • 1 1/2 c. milk
  • 2 eggs
  • 2 tsp. vanilla
  • 1/2 c. butter, melted

Topping:

  • 1 c. butter, softened
  • 1 c. brown sugar
  • 2 Tbsp. flour
  • 1 Tbsp. cinnamon

Mix everything together except for the butter. Slowly stir in the melted butter and pour into a greased 9×13 pan. For the topping, mix all the ingredients together until well combined. Drop evenly over the batter and swirl with a knife. Bake at 350 for 28-32 minutes or until done {took mine 40 minutes}.

Glaze:

  • 2 c. powdered sugar
  • 5 Tbsp. milk
  • 1 tsp. vanilla

Drizzle over warm cake.

    This looks very yummy. I made one using a box cake mix before but it was too sweet. Yuck. I think I’ll try this out tomorrow.

    Oh yeah this isn’t a box mix or a refrigerated roll recipe :) Going to try it this weekend as I’ve got company and extra people to help eat it.
