Chocolate Friday: Sweet Potato

Yes, you read that right.

Chocolate Friday is using sweet potatoes.

Is is a fudge sauce on top of a baked sweet potato?

No…

Is it a sweet potato casserole with chocolate chips?

Nope…

It is a recipe that has chocolate chips and one sweet potato.

And it is good.

Super moist.

I found the recipe in my Penzey’s catalog and tweaked it a bit.  Not because it needed it, but because I didn’t have all the ingredients.  Everyone loved them… one nameless child was concerned they would be weird but loved them in the end.

We are talking about Sweet Potato Chocolate Chip Cookies.  One tip if you make them.  Store them separated by wax/parchment paper.  Since they are so moist they stick together when stacked on top of each other… ask me how I know!

Sweet Potato Chocolate Chip Cookies

  • 3/4 cup mashed, cooked sweet potato {1 medium potato}
  • 1 cup butter, softened
  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp baking powder
  • dash of salt
  • 1/4 tsp. cinnamon
  • 2 cups semisweet chocolate chips

Preheat oven to 350.

In large bowl, cream together the sweet potato, butter, eggs, sugars and extract.  In a separate bowl, combine the flour, baking soda, baking powder, salt and cinnamon.  Gradually add the dry ingredients to the sweet potato mixture and beat until blended.  Fold in the chocolate chips.  Drop by teaspoons onto a baking sheet and bake for 10-12 minutes.

Makes about 4 dozen.

    I am really enjoying your blog! Thank you for this recipe. I am always looking for ways to share my love of sweet potatoes with my family. Who wouldn’t like one made with chocolate chips and its a cookie too?!. :)
