Chicken Salad Sandwich

As you can imagine, in this heat with no air, cool meals are often on my menu. I came across this recipe and I loved how they served the chicken salad on raisin bread. To save myself time I used one of the rotisserie chickens from the store. Everyone loved this and next time I will have to double it so we can have it the next day!

- 2 (12-ounce) cans chicken, drained, or 2 cup shredded cooked chicken
- 1-2 chopped unpeeled Granny Smith apples
- 1 cup chopped celery
- 1/2 cup chopped walnuts {we omitted this}
- 1/2 cup mayonnaise
- 2 Tbsp. plain yogurt
- 2 Tbsp. honey mustard
- 1 tsp. lemon juice
- 1/8 tsp. salt
- 8 slices raisin bread
- leaf lettuce
Combine all ingredients except bread and lettuce in a medium bowl and mix well. Make sandwiches with bread and lettuce. You can store the chicken salad recipe filling in the refrigerator up to two days, tightly covered.

Sounds delish, minus the mustard and put the walnuts back in! Actually I always make the PC one with pecans, apples and grapes.

I made this a few days ago and it was great! Even my chicken-hater liked it … until another little W mentioned it was chicken.
Isn’t funny how the like things till someone tells them what they are eating. My daughter is like that with blueberries. She once LICKED her fingers clean from a lemon blueberry bread. Then we told her what it was. She hates them so much she TELLS people she is allergic to them!!!
